The Cavalli family of Reggio Emilia has produced wine and vinegar since 1920. Their traditional balsamic vinegar is aged for many years in a series of barrels of different types of woods.

Cavalli Balsamic Condimento is made from grape musts aged in barrels of different woods including cherry and juniper. This more affordable balsamic seasoning is popular for using in the preparation of fine foods. It is so named to distinguish it from the more precious Traditional Balsamic Vinegar.

Cavalli Balsamic Condimento is dense and highly aromatic with a touch of sweetness similar to that of a plum. Suitable for everyday use.

Each bottle contains 500 ml. of Balsamic Condimento by Cavalli from Reggio Emilia, Italy.

Pork Cutlets with Cavalli Balsamic Vinegar

  • 4 (4-6 oz) boneless pork fillets, pounded to approximately ½ inch thick
  • 1/2 c. flour
  • 2 T. butter
  • 2 T. olive oil for sautéing
  • salt and pepper to taste
  • 4 t. Cavalli Condiment Balsamic or Riserva Nando Balsamic

Place flour in shallow dish and lightly dredge the pork fillets with flour.

In large frying pan, heat olive oil and butter together over medium-high heat. Add the pork cutlets and brown for 3-4 minutes per side, turning meat once. Avoid crowding the pan, which will reduce browning and cook in batches if necessary.

Remove from heat and season with salt and pepper to taste.

Keep finished cutlets warm in the oven until ready to serve.

Drizzle the balsamic vinegar over meat immediately before serving.

Serves 4.

Try this elegant take on Mayonnaise: Place 3 eggs, a teaspoon of Cavalli Balsamic Condimento and the juice of half a lemon in a blender. Mix well. Add 1/3 cup minced parsley and one teaspoon chopped capers to the mayo and then serve on hard boiled eggs, tuna stuffed tomatoes, and on any boiled meats.
