Miguel and Valentino Sherry Wine Vinegar follows a parallel aging system to Sherry known as the "Solera System" and is made exclusively from the Fino Palomino variety of grape. It is considered a "Vinegre de Yema" because it is made from the grape must which separates it from a regular vinegar.
