In the 1970's, Franca Franzoni started keeping bees to supply her home with honey. She now produces four different kinds of honey at her country estate in the area near Chianti. Franca's passion for beekeeping and her knowledge of nature's ever-changing landscape of blooms help her create the incredible golden nectar we know as Franca's honey.

Franca's farm is near the village of Polo, located just south of Florence in the Chianti region. It is surrounded by fields of wild flowers, acacia and chestnut trees. Franca considers herself a partner in the bee's efforts, aiding in the building of the hives, carefully planning the bee's foraging path and assuring production of a pure, clean artisan product.

Once the honey is separated from the comb by centrifugation, it is filtered. After that, the honey is decanted for 20 days. The final product is poured into jars and is ready for shipment. Ms. Franzoni believes in keeping the whole and pure flavors of the honey intact. Her honey contains only pure honey, nothing else.

Each jar of Franca Franzoni Chestnut Honey contains 500g or 17oz. (Note: All Franca Franzoni honeys are numbered, denoting limited production.)

On a visit to Italy in 2004 we met Franca Franzoni and sampled some of the honeys she cultivates. Franca is a delightful lady and a wonderful cook. The honeys are all excellent and the chestnut is the most distinctive. So we were delighted to find these honeys at CyberCucina.com and have purchased them several times, always with great satisfaction.

I first learned of Chestnut (Castagno) Honey from Laurey Masterton (The Fresh Honey Cookbook). Laurey lectured on bees and on the varietals of honey. She provided samples. Chestnut was everyone's favorite. I called The Savannah Bee Company and they no longer carried it but gave me the name of CyberCucina. I ordered and just in a couple of days (no extra postage) I had my Chestnut Honey. I'm serving it during the holidays, ladled over a sliced pear and a chunk of pecorino cheese complimented with a beautifully flavored Dry Sparkling Wine.

I admit that my family is prejudiced. We visited Franca on her farm during our trip to Italy in 2004. It was a delightful and memorable day capped by a tour of her honey "factory" and a tasting. We quickly ran through the supply she gave us of acacia, chestnut, and millefiori honeys so I was very pleased to find this website.

The chestnut honey, in particular, is outstanding. Deeply colored, distinctively flavored, and reported to have medicinal properties. You will not find better, anywhere.

I had a local honey and a Virginia Wildflower honey, so the chestnut honey and lavender were the exotics. They were also the favorites.

The chestnut honey was smokey and leathery and especially delicious on smoked meats and gorgonzola. The group also felt it enhanced the flavor of several wines !!The lavender was the hands down favorite of the group. They put it on mild cheese, fruits, and just about everything else. It was a great party with terrific taste sensations.

I had almost given up hope of finding a Chestnut Honey, specifically we were looking for an Austrian Chestnut Honey. The only one I could find would cost $40 to import etc. So we took a chance given the growing regions in Northern Italy were close to the regions where the chestnut trees/honey is harvested in Austria. I didn't go wrong! The Cucina product is amazing. It is not only great to have on toast or on a banana but also used as a glaze for fish. Enjoy !!!
