The Alta Valle Scrivia factory is located in an absolutely gorgeous valley in northern Italy, just inland from Genova. A stream runs down the middle and green mountains are all around. Here, various pastas take shape, particularly those commonly used in Ligurian cooking.

Ricciole by Alta Valle is made using durum wheat semolina and water. This short pasta, somewhat like a loosely rolled coil in shape allows for a short cooking time and an excellent melding with sauces of various kinds.
