This Week's Featured Recipe - Sweet Pumpkin
and Sage Risotto
This recipe by Bella Cucina Artful Food calls for the use of olive
oil but we have substituted pumpkin seed oil for a more robust flavor.
If mascarpone cheese is unavailable you may substitute cream cheese.
Heat butter and oil in a pan over medium heat, saute onion, sage and
garlic. Stir in rice until well coated. Add white wine and cook until
liquid is absorbed. Add stock one cup at a time, stirring constantly,
until rice is al dente. Fold in pesto and mascarpone. Add salt and
pepper to taste. Top with grated Parmesan cheese. Serves 2.
