Casa Pons produces only 25,000 bottles annually of their Summer Fresh EVOO. Spanish Arbequina olives are hand picked during the fall harvest and then flash frozen to lock in freshness and flavor. In the spring, those frozen olives are stone-milled and bottled for a unique method that allows consumers to enjoy “new” oil during the summer.
