Mini Almond & Orange Mincemeat & Pumpkin Pies Recipe
- 1 cup Almond & Orange Mincemeat filling
- 1 egg, beaten
- 1 cup pumpkin puree
- 1/2 cup white sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup whipped cream
- 4 premade mini pie shells
Preheat oven to 425 degrees F (220 degrees C).
In a medium bowl beat egg, pumpkin, sugar, spices, and salt together with rotary beater.
Spread about 1 tablespoon of mincemeat filling into the bottom of the mini pie shell. Top off pie by pouring pumpkin mixture over mincemeat.
Bake for 35 to 40 minutes. Serve with whipped cream, slightly warm or cool, but not cold.
Double the recipe to make more pies.
