1829 was the birth date of the Laguiole folding knife. The original model is still very close to the current one we all know today. The Aubrac was a vast rural region made up of isolated farmhouses containing several families. The elder members of these households used to leave to go to work in Catalonia during the winter season, as farmhands and mostly as woodcutters. Some of then returned to Rouerge with a Spanish knife (The Navaja) in their pockets.
